- 1 cup buttermilk (or 1 cup milk + 1 tablespoon lemon juice for a substitute)
- 1 large egg
- 2 tablespoons melted butter, plus extra for cooking
- 2 tablespoons pure maple syrup (plus more for brushing)
- 4 breakfast sausage patties (store-bought or homemade)
- 4 slices American or cheddar cheese
Instructions
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In a separate bowl, beat the egg with the buttermilk, melted butter, and maple syrup.
- Pour the wet ingredients into the dry and gently stir until just combined — it’s okay if a few lumps remain; overmixing will make the pancakes tough.
- Heat a non-stick skillet or griddle over medium heat and lightly brush with melted butter.
- Pour small rounds of batter (about 3 inches wide) onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
- Flip carefully and cook for another 1-2 minutes until golden and cooked through. Transfer to a plate and brush the warm pancakes lightly with maple syrup.
- In the same skillet, cook the sausage patties over medium heat until browned and cooked through, about 3-4 minutes per side.
- To assemble, place one pancake as the base, layer with a slice of cheese and a sausage patty, then top with another pancake.
- If you want the cheese extra melty, pop the assembled sandwich in a warm skillet for 30 seconds per side, pressing gently with a spatula.
- Serve immediately and enjoy that perfect sweet-savory bite!
