Ingredients
The key to this dish lies in selecting the right ingredients that let the flavors shine without overwhelming the palate. I always opt for high-quality sausages — the kind with natural casing and minimal fillers — because they bring a depth of flavor that processed versions just can’t match. When choosing sweet potatoes, I look for ones that feel firm and heavy for their size, with smooth skin and vibrant orange flesh. Garlic is a must for that rich, aromatic undertone, and a touch of honey helps marry the savory and sweet elements perfectly.
- 4 medium sweet potatoes, peeled and cut into 1-inch cubes
- 1 pound Italian sausage (mild or spicy, depending on preference), sliced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
If you want to keep it lighter, turkey sausage is a great swap, or try using maple syrup instead of honey for a slightly different sweetness that pairs well with fall flavors.
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, toss the sweet potato cubes with olive oil, smoked paprika, salt, and pepper until evenly coated.
- Spread the sweet potatoes out on the baking sheet in a single layer and roast for 20 minutes, flipping halfway through to ensure even browning.
- While the sweet potatoes roast, heat a skillet over medium heat and cook the sausage slices until browned and cooked through, about 7-8 minutes. Remove from heat and set aside.
- After the initial roasting, remove the baking sheet and gently toss the sweet potatoes with minced garlic and honey. Add the cooked sausage slices on top.
- Return the baking sheet to the oven and roast for an additional 10-12 minutes, allowing the garlic to mellow and the honey to caramelize slightly.
- Once done, sprinkle with fresh parsley for a pop of color and freshness before serving.
Whenever I make this, I keep a close eye during the last few minutes to prevent the garlic from burning — that’s a simple trick I picked up from watching my mom cook, and it really makes a difference!
