Ingredients
The key to this dish lies in selecting the right ingredients that bring out the best flavor without fuss. I always reach for fresh, high-quality honey and Dijon mustard because they create that perfect tangy sweetness that makes this recipe shine. Using bone-in, skin-on chicken thighs gives you juicy meat and crispy skin, but boneless works just fine if you’re short on time. A little garlic and a splash of olive oil round out the flavors simply and beautifully.
- 4 bone-in, skin-on chicken thighs (about 1.5 pounds)
- 3 tablespoons Dijon mustard
- 2 tablespoons honey (raw honey preferred)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and freshly ground black pepper, to taste
- Optional: 1 teaspoon apple cider vinegar for extra tang
If you don’t have Dijon mustard, whole grain mustard is a lovely substitute for added texture. And if honey isn’t on hand, maple syrup can add a different but equally delightful sweetness.
Instructions
- Preheat your oven to 400°F (200°C). This heat level helps crisp the chicken skin beautifully.
- In a small bowl, whisk together the Dijon mustard, honey, olive oil, minced garlic, and apple cider vinegar (if using). Set aside.
- Pat the chicken thighs dry with paper towels and season generously with salt and pepper. This step ensures crispy skin and well-seasoned meat.
- Heat a large oven-safe skillet over medium-high heat. Place chicken thighs skin-side down and sear for 5-6 minutes until golden and crispy. Flip and cook for another 2 minutes on the other side.
- Remove the skillet from heat and brush the honey mustard sauce all over the chicken, making sure to coat each piece thoroughly.
- Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is bubbly and caramelized.
- Let the chicken rest for 5 minutes before serving. This helps keep the meat juicy and allows the flavors to settle.
