- 4 boneless, skinless chicken breasts (about 6 oz each)
- 1/2 cup crumbled feta cheese or 4 oz block feta, crumbled
- 3 tablespoons hot honey (or regular honey mixed with 1/2 teaspoon chili flakes)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)

- Preheat your oven to 400°F (200°C). This high heat will help the chicken cook quickly while the feta softens perfectly.
- Pat the chicken breasts dry with paper towels, then season both sides generously with salt, pepper, and dried oregano. This simple seasoning forms the base of the flavor.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken breasts and sear for about 3-4 minutes on each side until golden brown. Don’t rush this step — a good sear locks in juices and adds flavor.
- Lower the heat to medium. Add minced garlic to the pan and sauté for 30 seconds until fragrant, being careful not to burn it.
- Drizzle the hot honey evenly over the chicken breasts, then sprinkle the crumbled feta cheese on top. The feta will melt slightly, creating a creamy, tangy topping.
- Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the feta is golden around the edges.
- Remove from oven and let rest for 5 minutes. Garnish with freshly chopped parsley and a squeeze of lemon if desired. Serve warm and enjoy!
