Ingredients
Scale
The key to this dish lies in selecting the right ingredients — fresh, simple, and full of flavor. Over the years, I’ve learned that quality basics make all the difference, especially when you’re working with a delicate sauce like this one. Choosing good chicken breasts, fresh cream, and a whiskey you enjoy drinking will elevate the final dish. Don’t worry if you don’t have Irish whiskey on hand; I’ve found that a good-quality bourbon or even a smooth Scotch works beautifully as a substitute.
- 4 boneless, skinless chicken breasts
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil or unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup Irish whiskey (or substitute with bourbon or Scotch)
- 1 cup heavy cream
- 1 teaspoon Dijon mustard
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts generously with salt and pepper on both sides. This simple step is crucial for building flavor from the start.
- Heat olive oil or butter in a large skillet over medium-high heat until shimmering. Add the chicken breasts and cook for about 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken and set aside, keeping it warm.
- In the same skillet, reduce the heat to medium and add the chopped onion. Sauté until softened and translucent, about 3-4 minutes.
- Add the minced garlic and cook for another 30 seconds until fragrant—don’t let it burn!
- Carefully pour in the whiskey to deglaze the pan, scraping up any browned bits from the bottom. Let the whiskey reduce by half, about 3 minutes, to mellow the alcohol and concentrate the flavor.
- Stir in the heavy cream and Dijon mustard, bringing the sauce to a gentle simmer. Let it thicken slightly, about 4-5 minutes, stirring occasionally.
- Return the chicken breasts to the pan, spooning the sauce over them. Simmer together for another 2-3 minutes so the flavors meld beautifully.
- Finish with a sprinkle of fresh parsley for a bright, fresh touch before serving.
