Ingredients
The key to this dish lies in selecting the right ingredients that bring freshness and depth without complicating the prep. I always reach for a good-quality cheese tortellini — it’s the star of the show and worth investing in. For the veggies, I prefer crisp, seasonal picks like cherry tomatoes and cucumbers, which add a refreshing crunch. And the dressing? Homemade Italian vinaigrette is a must; it’s bright and tangy, tying everything together perfectly. If you’re pressed for time, a store-bought Italian dressing can work, but nothing beats that homemade touch.
- 12 ounces cheese tortellini (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup black olives, sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup mozzarella pearls or diced mozzarella
- 1/4 cup fresh basil leaves, roughly chopped
- 1/3 cup Italian dressing (homemade or store-bought)
- Salt and freshly ground black pepper, to taste
Substitution tips: You can swap mozzarella with feta for a tangier twist, or use whole wheat tortellini for added fiber. Feel free to add bell peppers or artichoke hearts for extra veggie goodness.
Instructions
- Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions, usually 3-5 minutes for fresh or frozen. Drain and rinse under cold water to stop the cooking and cool the pasta.
- In a large mixing bowl, combine the cooled tortellini with cherry tomatoes, cucumber, black olives, red onion, and mozzarella pearls.
- Pour the Italian dressing over the salad and gently toss to coat all ingredients evenly. Season with salt and freshly ground black pepper to taste.
- Fold in the fresh basil leaves for a fragrant finish.
- Cover and refrigerate for at least 30 minutes to let the flavors meld. This resting time makes a noticeable difference, bringing everything together beautifully.
- Before serving, give the salad one last gentle toss and adjust seasoning if needed.
One of my favorite moments is watching my kids’ faces light up when they dig into this salad — it’s proof that simple, fresh food really does bring joy.
