The key to this dish lies in selecting the right ingredients that balance freshness and bold flavors. I always opt for quality ground beef with enough fat to get that crispy crust, and fresh jalapeños that bring just the right amount of spice. Cream cheese makes the filling luxuriously creamy, and sharp cheddar adds a rich, melty finish. When choosing buns, something soft yet sturdy works best to hold all the goodness without falling apart — a lesson I learned after a few messy family dinners!
- 1 pound ground beef (80/20 blend for juiciness)
- 4 ounces cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 2 fresh jalapeños, finely diced (remove seeds for milder heat)
- 4 burger buns, lightly toasted
- 4 tablespoons unsalted butter, divided
- Salt and freshly ground black pepper, to taste
- Optional: lettuce, tomato slices, and pickles for topping
Instructions
- Preheat a large cast-iron skillet or griddle over medium-high heat for about 5 minutes until very hot.
- In a small bowl, mix the softened cream cheese with diced jalapeños until well combined.
- Divide the ground beef into 8 equal portions. Flatten each into a thin patty about 3 inches wide.
- Place one patty on the skillet, immediately add a spoonful of the jalapeño cream cheese mixture on top, then cover with a second patty to seal the filling inside.
- Using a spatula, press down firmly on the stacked patties to smash them together, creating a thin burger about ¼ inch thick.
- Cook for 2-3 minutes without moving until a crust forms, then flip carefully using two spatulas.
- Immediately sprinkle shredded cheddar cheese on the cooked side, then cook for another 2 minutes until cheese melts and the burger is cooked through.
- Meanwhile, butter the buns and toast them in a separate pan over medium heat until golden brown.
- Assemble the burgers with your favorite toppings like lettuce, tomato, and pickles, then serve immediately.
