  • 10 cups popped popcorn
  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1/4 cup light corn syrup
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups mini marshmallows

Instructions

  1. Preheat your oven to 250°F. Line a large baking sheet with parchment paper and spread the popped popcorn evenly over the sheet.
  2. In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar, corn syrup, and salt. Bring the mixture to a boil, stirring constantly for 5 minutes.
  3. Remove from heat and stir in the baking soda. The mixture will bubble up, so be careful!
  4. Pour the caramel mixture over the popcorn, stirring until all the popcorn is coated evenly.
  5. Place the baking sheet in the oven and bake for 45 minutes, stirring every 15 minutes.
  6. In the last 5 minutes, sprinkle the mini marshmallows over the popcorn and let them melt slightly.
  7. Remove from the oven and let cool completely before breaking into pieces and serving.
