- 10 cups popped popcorn
- 1/2 cup unsalted butter
- 1 cup packed brown sugar
- 1/4 cup light corn syrup
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups mini marshmallows
Instructions
- Preheat your oven to 250°F. Line a large baking sheet with parchment paper and spread the popped popcorn evenly over the sheet.
- In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar, corn syrup, and salt. Bring the mixture to a boil, stirring constantly for 5 minutes.
- Remove from heat and stir in the baking soda. The mixture will bubble up, so be careful!
- Pour the caramel mixture over the popcorn, stirring until all the popcorn is coated evenly.
- Place the baking sheet in the oven and bake for 45 minutes, stirring every 15 minutes.
- In the last 5 minutes, sprinkle the mini marshmallows over the popcorn and let them melt slightly.
- Remove from the oven and let cool completely before breaking into pieces and serving.
