I always choose fresh, high-quality ground beef, crisp iceberg lettuce, and sharp cheddar cheese—ingredients that make a difference you can taste. For the special sauce, homemade dressing beats store-bought every time, and it’s surprisingly simple to make with pantry staples.
- 1 pound ground beef (80/20 blend for juiciness)
- Mini sesame seed buns (12 small slider buns)
- 6 slices sharp cheddar cheese, halved
- 1 cup shredded iceberg lettuce
- 1/4 cup finely chopped white onion
- 8–10 dill pickle slices
- For the special sauce:
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon sweet pickle relish
- 1 teaspoon white vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
If you’re short on cheddar, Swiss cheese is a great substitute. And if you want a lighter version, swap mayo for Greek yogurt in the sauce—it still tastes amazing!
Instructions
- Preheat your grill or skillet over medium-high heat. While it heats, divide the ground beef into 12 equal portions and gently shape into thin, round patties slightly larger than your mini buns. Avoid pressing too hard to keep them tender.
- Cook the patties for about 2-3 minutes on each side, until nicely browned and cooked through but still juicy. Add a half-slice of cheese on each patty during the last minute to melt.
- While the patties cook, toast the mini buns lightly on the grill or in a dry pan until golden. This adds a lovely crunch and prevents sogginess.
- Prepare the special sauce by combining all sauce ingredients in a small bowl. Whisk well and taste to adjust seasoning.
- To assemble, spread a generous teaspoon of special sauce on the bottom bun, layer with lettuce, a cheese-topped patty, a few pickle slices, some chopped onions, and then the top bun.
- Serve immediately while warm, and watch your family dig in happily!
