  • 4 medium Yukon Gold potatoes, thinly sliced
  • 1 pound ground beef (or ground turkey/chicken as a substitute)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese (optional for extra meltiness)
  • 1/2 cup beef broth or chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3 minutes until translucent.
  2. Add the minced garlic and cook for another 30 seconds, stirring constantly to avoid burning.
  3. Increase the heat to medium-high, add the ground meat, and cook until browned and cooked through, breaking it apart as it cooks (about 6-8 minutes). Season with salt, pepper, and smoked paprika.
  4. Once the meat is browned, spread the thinly sliced potatoes evenly over the meat in the skillet. Pour the broth over the potatoes to help them cook through and steam slightly.
  5. Cover the skillet with a lid and reduce heat to medium-low. Let the potatoes cook for about 15 minutes or until tender, checking occasionally to prevent sticking.
  6. Remove the lid, sprinkle the shredded cheddar and mozzarella evenly over the top. Cover again and cook for another 5 minutes until the cheese melts completely and becomes bubbly.
  7. Garnish with fresh parsley, if desired, and serve hot straight from the skillet.
