  • 1 pound lean ground turkey
  • 1 ½ pounds Yukon gold potatoes, diced into ½-inch cubes

  • 1 teaspoon dried oregano

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced potatoes, season with salt and pepper, and cook until golden and tender, about 12-15 minutes, stirring occasionally. Remove potatoes from the pan and set aside.
  2. In the same skillet, add the remaining olive oil and sauté the chopped onion until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the ground turkey to the skillet. Break it up with a spatula and cook until browned and cooked through, about 6-8 minutes. Season with smoked paprika, oregano, red pepper flakes (if using), salt, and pepper.
  4. Return the cooked potatoes to the pan with the turkey. Pour in the chicken broth or water to deglaze the skillet, scraping up any browned bits from the bottom. Stir everything together and cook for another 3-5 minutes, allowing the flavors to meld.
