- 2 large eggs
- 2 cups whole milk

- Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
- In a skillet over medium heat, cook the sausage until browned and cooked through, breaking it up with a spatula. Drain any excess fat and set aside.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the eggs, then stir in the milk, melted butter, and vanilla extract if using.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined — a few lumps are okay to keep pancakes tender.
- Fold the cooked sausage and half of the shredded cheddar cheese into the batter.
