Crispy Parmesan Crusted Potatoes That Will Steal the Show

Learn how to make delicious Parmesan Crusted Potatoes. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

The key to this dish lies in selecting the right ingredients—fresh potatoes with thin skins work best, and good-quality Parmesan cheese really makes the flavor pop. I always choose Yukon Gold potatoes because they’re creamy inside yet hold their shape well, and they crisp up beautifully when baked. I also recommend freshly grated Parmesan over pre-shredded for that authentic, nutty flavor. When I’m pressed for time, I sometimes swap in Pecorino Romano for a sharper bite, which my kids surprisingly enjoy too!

  • 2 pounds Yukon Gold potatoes, washed and cut into 1-inch pieces
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs (or a mix of oregano, thyme, and basil)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. In a large bowl, toss the cut potatoes with olive oil, garlic powder, dried herbs, salt, and pepper until evenly coated. This step is where the flavor starts to build, so make sure every piece is well-seasoned.
  3. Sprinkle the grated Parmesan cheese over the potatoes and toss gently again to coat them evenly. The cheese will form that irresistible crust as it bakes.
  4. Spread the potatoes out in a single layer on the baking sheet, leaving a little space between each piece for even crisping.
  5. Bake for 30-35 minutes, flipping the potatoes halfway through. Look for a deep golden color and crispy edges — that’s when you know they’re ready.
  6. Remove from the oven and let them cool for a few minutes. Garnish with fresh parsley if desired, and serve warm.
