The key to this dish lies in selecting the right ingredients—fresh, ripe peaches add the perfect natural sweetness and vibrant flavor. Over the years, I’ve learned that using quality butter and flaky croissant dough really elevates the texture, making these cruffins irresistibly tender. Whenever possible, I opt for local peaches during the summer, but frozen peaches work just fine for off-season baking.
- 1 package refrigerated croissant dough (8 count)
- 2 cups fresh peaches, peeled and diced (or thawed frozen peaches)
- 1/3 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1 tablespoon cornstarch
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 egg, beaten (for egg wash)
- Powdered sugar, for dusting (optional)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a muffin tin to prevent sticking.
- In a medium saucepan, combine diced peaches, sugar, lemon juice, cinnamon, and cornstarch. Cook over medium heat, stirring often, until the mixture thickens and the peaches soften—about 8-10 minutes. Stir in butter and vanilla extract, then remove from heat and let cool.
- Unroll the croissant dough and separate into triangles. Using a rolling pin, gently roll each triangle into a long rectangle (about 8 inches long).
- Spread a spoonful of the cooled peach filling evenly over each rectangle, leaving a small border at the edges.
- Starting from the wide end, carefully roll up each rectangle tightly into a spiral shape, similar to a cinnamon roll.
- Place each rolled cruffin into a muffin cup, seam side down. Brush the tops lightly with the beaten egg for a golden finish.
- Bake for 18-22 minutes or until golden brown and puffed. Keep an eye on them—every oven varies!
- Remove from oven and let cool in the pan for 5 minutes before transferring to a wire rack. Dust with powdered sugar if desired before serving.
