- 1 ½ pounds ground beef (80/20 for best flavor)
- 1 medium green bell pepper, finely chopped
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 cup provolone cheese, shredded
- 1 cup breadcrumbs (preferably panko for texture)
- 2 large eggs
- ½ cup milk
- 2 tablespoons Worcestershire sauce
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- Optional: 1 teaspoon smoked paprika for a subtle smoky kick
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper for easy cleanup.
- Heat olive oil in a skillet over medium heat. Add the chopped bell pepper and onion, sautéing until soft and fragrant, about 5-7 minutes. Stir in the minced garlic and cook another 1-2 minutes. Remove from heat and let cool slightly.
- In a large bowl, combine the ground beef, cooled pepper and onion mixture, breadcrumbs, eggs, milk, Worcestershire sauce, smoked paprika (if using), salt, and pepper. Mix gently with your hands or a spoon until just combined — overmixing can make the meatloaf dense.
- Transfer half of the meat mixture into your loaf pan or shape it into a loaf on the baking sheet. Sprinkle half of the shredded provolone evenly over the meat.
- Top with the remaining meat mixture, pressing gently to seal. Finish by sprinkling the remaining cheese on top.
- Bake uncovered for 50-60 minutes, or until the internal temperature reaches 160°F (71°C) and the cheese is bubbly and golden on top.
- Let the meatloaf rest for 10 minutes before slicing. This helps keep it juicy and makes serving easier.
