- 1 1/2 cups graham cracker crumbs

Instructions
- Preheat your oven to 325°F (160°C). Line a muffin tin with paper liners or lightly grease for easy removal.

- Fold in the crushed pineapple and sour cream gently until just combined.

- Bake for 18-20 minutes or until the centers are set but still slightly jiggly. Avoid overbaking to prevent cracks.
- Remove from the oven and cool to room temperature, then refrigerate for at least 3 hours, preferably overnight, to let the flavors meld and the texture firm up.
- Before serving, garnish with toasted coconut flakes if desired for an extra tropical touch.
