- 2 pieces plain naan bread (6–8 inches each)
- 1 cup fresh mozzarella, sliced or torn
- 1 cup cherry tomatoes, halved or 2 medium Roma tomatoes sliced
- 1/4 cup fresh basil leaves
- 2 tablespoons olive oil, plus extra for drizzling
- 1 teaspoon balsamic glaze or reduction (optional but recommended)
- Salt and freshly ground black pepper, to taste
Substitution tips: If you can’t find fresh mozzarella, burrata or even a mild fresh goat cheese can work beautifully. For a gluten-free option, look for gluten-free naan or substitute with thin pita bread. And if fresh basil isn’t available, a sprinkle of dried Italian herbs can add a nice touch in a pinch.
Instructions
- Preheat your oven to 425°F (220°C). Place a baking sheet or pizza stone inside to heat up — this helps the naan get crispy.
- Lightly brush each naan piece with olive oil on both sides. This keeps the bread from drying out and helps it crisp beautifully.
- Arrange the naan on the hot baking sheet and bake for about 3-4 minutes, just until it starts to firm up but not brown.
- Remove the naan from the oven. Evenly distribute the fresh mozzarella slices over each piece, followed by the halved cherry tomatoes or sliced Roma tomatoes.
- Return to the oven and bake for another 6-8 minutes, or until the cheese is melted and bubbly and the naan edges are golden.
- Take the pizzas out and immediately scatter fresh basil leaves on top. Season with salt and pepper to taste, then drizzle with a little more olive oil and balsamic glaze if using.
