Ultimate Roasted Jalapeno Popper Grilled Cheese Recipe You Need to Try

Learn how to make delicious Roasted Jalapeno Popper Grilled Cheese. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

The key to this dish lies in selecting fresh, quality ingredients that let each flavor shine. I always reach for good crusty bread that crisps up nicely and high-quality cheese that melts smoothly — these small choices make a big difference. Roasting fresh jalapenos brings out their natural sweetness and softens their bite, which is important when cooking for a family with different spice preferences. If you want a milder version, you can swap jalapenos for poblano peppers or omit the seeds to reduce the heat.

  • 4 slices of sourdough or rustic white bread
  • 2 fresh jalapeno peppers, roasted and seeded
  • 1 cup cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven’s broiler or a grill pan on medium-high heat. Place the whole jalapenos on a baking sheet and roast for about 8-10 minutes, turning occasionally until the skin is charred and blistered.
  2. Remove jalapenos from the heat and place them in a bowl covered with plastic wrap to steam for 5 minutes. Then peel off the charred skin, slice in half, and remove seeds for less heat.
  3. In a small bowl, mix softened cream cheese with garlic powder, salt, and pepper until smooth. Chop the roasted jalapenos finely and stir them into the cream cheese mixture.
  4. Butter one side of each bread slice evenly. On the unbuttered side, spread a generous layer of the jalapeno cream cheese mixture, then sprinkle with both shredded cheddar and mozzarella cheeses.
  5. Top with the remaining bread slices, buttered side facing out. Heat a skillet over medium heat and place the sandwiches in the pan.
  6. Cook for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted. Lower the heat if bread browns too quickly.
  7. Remove from heat and let sit for a minute before slicing. This helps the cheese set slightly for less mess and more satisfying bites.
