- 4 slices of sourdough or rustic white bread
- 2 fresh jalapeno peppers, roasted and seeded
- 1 cup cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons unsalted butter, softened
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat your oven’s broiler or a grill pan on medium-high heat. Place the whole jalapenos on a baking sheet and roast for about 8-10 minutes, turning occasionally until the skin is charred and blistered.
- Remove jalapenos from the heat and place them in a bowl covered with plastic wrap to steam for 5 minutes. Then peel off the charred skin, slice in half, and remove seeds for less heat.
- In a small bowl, mix softened cream cheese with garlic powder, salt, and pepper until smooth. Chop the roasted jalapenos finely and stir them into the cream cheese mixture.
- Butter one side of each bread slice evenly. On the unbuttered side, spread a generous layer of the jalapeno cream cheese mixture, then sprinkle with both shredded cheddar and mozzarella cheeses.
- Top with the remaining bread slices, buttered side facing out. Heat a skillet over medium heat and place the sandwiches in the pan.
- Cook for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted. Lower the heat if bread browns too quickly.
- Remove from heat and let sit for a minute before slicing. This helps the cheese set slightly for less mess and more satisfying bites.
