Using fresh chicken breasts that aren’t too thin or too thick helps the rolls stay juicy and tender. If you’re looking for substitutions, goat cheese or ricotta can be lovely alternatives to feta, and kale works well if spinach isn’t your favorite.

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon dried oregano
  • Toothpicks or kitchen twine for securing rolls

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking dish with parchment paper or lightly grease it.
  2. Place the chicken breasts between two sheets of plastic wrap and gently pound them with a meat mallet or rolling pin until about 1/4 inch thick. This helps them roll easily and cook evenly.
  3. In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. Mix the sautéed spinach with crumbled feta cheese in a bowl. Season with a pinch of salt and pepper.
  5. Spoon the spinach and feta mixture evenly onto each flattened chicken breast, leaving a small border around the edges.
  6. Carefully roll up each chicken breast, tucking in the sides as you go. Secure with toothpicks or kitchen twine to hold the shape.
  7. Place the rolls seam-side down in the prepared baking dish. Sprinkle dried oregano over the top and season with a little more salt and pepper.
  8. Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is cooked through.
  9. Remove from the oven and let rest for 5 minutes before slicing and serving to keep the filling intact and juicy.
