  • 1 pound Italian sausage (mild or spicy, depending on preference)
  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to keep cleanup easy.
  2. In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes out on the baking sheet in a single layer. Roast for 20 minutes, then remove from oven.
  4. While the sweet potatoes roast, heat a large skillet over medium heat. Remove sausage from casings and crumble it into the pan. Cook until browned and cooked through, about 7-8 minutes. Drain excess fat if needed.
  5. In a small bowl, whisk together the minced garlic, honey, soy sauce, and apple cider vinegar.
  6. After the sweet potatoes have roasted for 20 minutes, add the cooked sausage on top and drizzle the honey garlic sauce evenly over everything.
