  • 4 cups low-sodium chicken broth

  • 1 teaspoon dried rosemary
  • 1 bay leaf

  • 1 cup frozen peas (added at the end)
  • 2 tablespoons all-purpose flour (optional, for thickening)

Substitutions: You can swap chicken thighs for breasts if preferred, though thighs stay juicier in slow cooking. For a gluten-free option, replace all-purpose flour with cornstarch or omit altogether and let the stew stay brothier.

Instructions

  1. Heat olive oil in a skillet over medium heat. Lightly brown the chicken chunks on all sides, about 3-4 minutes per side. This step adds extra flavor but can be skipped if you’re short on time.
  2. Transfer the browned chicken to your slow cooker. Add the carrots, celery, onion, garlic, and potatoes on top.
  3. Pour in the chicken broth, then sprinkle the thyme, rosemary, salt, and pepper over everything. Add the bay leaf.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and the vegetables are cooked through.
  5. About 15 minutes before serving, stir in the frozen peas to warm through.
  6. If you prefer a thicker stew, mix the flour with a small amount of cold water to make a slurry, then stir it into the stew. Cook on high for an additional 15-20 minutes until thickened.
