- 1 ½ pounds boneless, skinless chicken thighs, cut into chunks
- 4 medium carrots, peeled and sliced
- 3 celery stalks, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 3 medium potatoes, peeled and cubed (Yukon Gold or Russet work well)
- 4 cups low-sodium chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and freshly ground black pepper, to taste

- 1 cup frozen peas (added at the end)
- 2 tablespoons all-purpose flour (optional, for thickening)
Substitutions: You can swap chicken thighs for breasts if preferred, though thighs stay juicier in slow cooking. For a gluten-free option, replace all-purpose flour with cornstarch or omit altogether and let the stew stay brothier.
Instructions
- Heat olive oil in a skillet over medium heat. Lightly brown the chicken chunks on all sides, about 3-4 minutes per side. This step adds extra flavor but can be skipped if you’re short on time.
- Transfer the browned chicken to your slow cooker. Add the carrots, celery, onion, garlic, and potatoes on top.
- Pour in the chicken broth, then sprinkle the thyme, rosemary, salt, and pepper over everything. Add the bay leaf.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and the vegetables are cooked through.
- About 15 minutes before serving, stir in the frozen peas to warm through.
- If you prefer a thicker stew, mix the flour with a small amount of cold water to make a slurry, then stir it into the stew. Cook on high for an additional 15-20 minutes until thickened.
- Remove the bay leaf and adjust seasoning to taste. Serve warm with crusty bread or over rice.
