- 2 pounds beef sirloin or chuck, cut into 1-inch cubes
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika (optional for a subtle smoky flavor)
- 1/2 cup beef broth
- 1 tablespoon Worcestershire sauce
- 2 teaspoons fresh thyme or 1 teaspoon dried thyme
- 1 tablespoon olive oil (for searing, optional)
Instructions
- If you have time, pat the beef cubes dry with paper towels to help them brown better. This step adds flavor but can be skipped if you’re in a hurry.
- Heat olive oil in a large skillet over medium-high heat. Quickly sear the beef cubes in batches until browned on all sides, about 2-3 minutes per batch. This locks in juices and adds depth of flavor.
- Transfer the seared beef to your slow cooker. Sprinkle with salt, pepper, and smoked paprika, if using.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant and lightly golden, about 1-2 minutes. Be careful not to burn the garlic.
- Pour the garlic butter over the beef in the slow cooker. Add beef broth, Worcestershire sauce, and thyme.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender and the sauce has thickened slightly.
- Before serving, taste and adjust seasoning as needed. If you want a thicker sauce, remove the lid and cook on high for an additional 15-20 minutes.
