The key to this dish lies in selecting the right ingredients — fresh, simple, and full of flavor. I always reach for crisp Romaine lettuce and good-quality Caesar dressing to make sure every bite sings. For the chicken, boneless, skinless thighs work beautifully because they stay juicy and develop that perfect crust when smashed. If you prefer breasts, just adjust cooking times slightly. And don’t forget the tortillas — I love using soft flour tortillas, but corn ones work well too if you want a bit more texture.
- 1 lb boneless, skinless chicken thighs
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- 1 cup Romaine lettuce, chopped
- ½ cup Caesar dressing (store-bought or homemade)
- ¼ cup grated Parmesan cheese
- 4 small flour tortillas (6-inch size)
- Optional: fresh lemon wedges for squeezing
- Optional: croutons, crushed, for extra crunch
Instructions
- Preheat a large skillet over medium-high heat and add olive oil.
- Season chicken thighs generously with salt and black pepper on both sides.
- Place one chicken thigh in the hot skillet and immediately smash down firmly with a spatula or heavy pan until it’s about ½-inch thick. Repeat with remaining thighs.
- Cook the chicken for 4-5 minutes on one side without moving, until the edges are crispy and golden brown.
- Flip and cook for another 3-4 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- Remove chicken from the pan and let it rest for a few minutes, then slice into strips or bite-sized pieces.
- Warm the tortillas in the skillet or microwave for a few seconds until soft and pliable.
- To assemble, spread a spoonful of Caesar dressing down the center of each tortilla.
- Layer on Romaine lettuce, sliced chicken, a sprinkle of Parmesan, and crushed croutons if using.
- Finish with a squeeze of fresh lemon juice for a bright pop of flavor. Fold and enjoy!
