The key to this dish lies in selecting the right bread and fresh ingredients that let the flavors shine. Over the years, I’ve learned that using a sturdy yet soft round loaf—like a sourdough boule—makes all the difference when creating your bread bowls. Fresh garlic, ripe tomatoes for the sauce, and quality pasta elevate this simple meal to something memorable. If you want a shortcut, store-bought marinara works perfectly, but homemade always brings that extra touch of love.

  • 1 large round sourdough or Italian bread loaf (about 810 inches in diameter)
  • 8 oz spaghetti pasta
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter, softened
  • 1 cup marinara sauce (homemade or store-bought)
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste
  • Optional: red pepper flakes for a little heat

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the top off the bread loaf, about 2 inches from the top, and carefully hollow out the inside, leaving about a 1-inch thick shell all around. Set aside the removed bread for another use like croutons.
  2. Cook the spaghetti according to package instructions until al dente. Drain and toss with a little olive oil to prevent sticking.
  3. In a small bowl, mix the softened butter with minced garlic and a pinch of salt. Spread this garlic butter evenly inside the hollowed bread bowl and on the cut-off top.
  4. Place the bread bowl and top on a baking sheet and bake for 10 minutes, or until the bread is golden and fragrant with garlic.
  5. Warm the marinara sauce in a saucepan over medium heat. Season with salt, pepper, and optional red pepper flakes to taste.
  6. Mix the cooked spaghetti with the warm marinara sauce.
  7. Fill the garlic bread bowl with the saucy spaghetti, then sprinkle the shredded mozzarella cheese evenly on top.
  8. Return the stuffed bread bowl to the oven and bake for another 8-10 minutes, or until the cheese is melted and bubbly.
  9. Garnish with fresh parsley before serving. Slice the top off like a lid and serve immediately for a fun, hands-on dinner experience.
