Ingredients
The key to this dish lies in selecting the right ingredients—fresh, quality produce and good bread make all the difference. I always reach for ripe avocados that are just soft enough to mash but still hold their shape, and I prefer chicken breasts for their lean, tender texture. Brioche buns are a favorite in my house because they’re rich but not overpowering, and they toast beautifully to add a slight crunch.
- 2 large chicken breasts, boneless and skinless
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 1 ripe avocado
- 1 tablespoon fresh lime juice
- 4 brioche sandwich buns
- 4 leaves of butter lettuce or baby spinach
- Optional: sliced tomatoes or red onion for extra crunch
If you want a milder spice, feel free to reduce the cayenne or swap it for smoked sweet paprika. And if brioche isn’t your favorite, a soft ciabatta or potato roll also works wonderfully here.
Instructions
- Start by preparing the chicken. In a small bowl, mix smoked paprika, cayenne pepper, garlic powder, salt, and black pepper. Rub this spice blend evenly over both sides of the chicken breasts.
- Heat olive oil in a skillet over medium-high heat. Once hot, add the chicken and cook for about 5-6 minutes on each side, or until the internal temperature reaches 165°F and the chicken is nicely browned.
- Remove the chicken and let it rest for 5 minutes before slicing it thinly. Resting helps keep the chicken juicy—a trick I learned from my mom’s kitchen years ago.
- While the chicken rests, mash the avocado in a small bowl with lime juice and a pinch of salt. The lime brightens the avocado and keeps it from browning quickly, which is perfect for assembling right before serving.
- Slice the brioche buns in half and toast them lightly in the skillet or toaster until golden. This adds a lovely crunch and prevents sogginess from the avocado.
- To assemble, spread a generous layer of mashed avocado on the bottom half of each bun. Layer with butter lettuce or spinach, sliced chicken, and optional tomato or red onion slices for added freshness and texture.
- Top with the other half of the bun, press gently, and serve immediately for the best flavor and texture.
