- 1 cup sushi rice
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 pound shrimp, peeled and deveined
- 1 tablespoon sriracha sauce
- 1 tablespoon mayonnaise
- 1 ripe avocado, diced
- 1 cucumber, thinly sliced
- 1 sheet nori, cut into small pieces
- 1 tablespoon sesame seeds
- 2 teaspoons soy sauce
- 1 teaspoon sesame oil
If you’re out of sushi rice, short-grain rice is a great substitute. And for those who prefer a milder kick, reduce the sriracha or swap it with a gentle chili sauce.
Instructions
- Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions.
- In a small bowl, mix rice vinegar, sugar, and salt. Stir this mixture into the warm rice, then let it cool.
- In another bowl, combine shrimp, sriracha, and mayonnaise. Sauté shrimp in a pan over medium heat until pink, about 3-4 minutes.
- To assemble the stacks, place a layer of rice at the bottom of a ramekin, followed by shrimp, avocado, cucumber, and nori pieces.
- Press down gently to compact the layers, then invert onto a serving plate.
- Drizzle with soy sauce and sesame oil, then sprinkle sesame seeds on top for garnish.
