  • 1 cup shredded mozzarella cheese (for melty goodness)
  • 1 tablespoon olive oil or butter (for cooking)
  • 1 small garlic clove, minced (optional, for a subtle flavor boost)
  • Freshly ground black pepper, to taste
  • Pinch of crushed red pepper flakes (optional, for a little heat)

Instructions

  1. Heat a large skillet over medium heat and add olive oil or butter. If using garlic, sauté it for about 30 seconds until fragrant, being careful not to burn it.
  2. Add the chopped spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until it wilts and reduces in volume. Remove from heat and drain any excess liquid to prevent sogginess.
  3. Lay one tortilla flat on a clean surface. Evenly spread a layer of shredded mozzarella over half of the tortilla.
