  • 1 pound sirloin or flank steak, thinly sliced
  • 2 cups cooked jasmine or basmati rice
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup milk (whole or 2%)
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste

Instructions

  1. Heat a large skillet over medium-high heat and add a tablespoon of butter. Once melted, add the sliced steak, seasoning with salt, pepper, chili powder, and cumin. Cook for about 3-4 minutes per side until browned but still tender. Remove steak from the pan and set aside.
  2. In the same skillet, add the chopped onion and sauté for 2-3 minutes until softened. Stir in the minced garlic and cook for another 30 seconds, until fragrant.
  3. Reduce the heat to medium-low and pour in the milk, stirring to deglaze the pan and scrape up any browned bits. Slowly add the shredded cheddar and Monterey Jack cheeses, stirring continuously until smooth and creamy.
  4. Add the cooked rice to the skillet, folding it gently into the cheese sauce. Return the steak slices to the pan, mixing everything carefully to combine and warm through for 2-3 minutes.
  5. Taste and adjust seasoning as needed. Garnish with chopped cilantro if desired, then serve immediately while warm and melty.
