Ingredients
Scale
The key to this dish lies in selecting fresh, quality ingredients that let the flavors shine without overcomplicating things. Whenever I shop for this recipe, I look for a good cut of sirloin or ribeye for the steak bites—something tender and flavorful but not too pricey. For the pasta sauce, fresh Parmesan cheese and real cream make all the difference, creating that luscious texture that sticks to every forkful. If you’re short on time, pre-grated cheese works fine, but I always find the freshly grated kind adds a little extra magic. Here’s what you’ll need:
- 1 pound sirloin steak, cut into bite-sized pieces
- 8 ounces fettuccine or your favorite pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- 2 tablespoons unsalted butter
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
- While the pasta cooks, pat the steak bites dry with paper towels to ensure a good sear. Season generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer, making sure not to overcrowd the pan. Sear for about 2-3 minutes on each side until browned and cooked to your desired doneness. Remove steak bites from the pan and set aside.
- Reduce heat to medium and add butter to the same skillet. Once melted, add minced garlic and sauté for about 30 seconds until fragrant but not browned.
- Pour in the heavy cream and bring to a gentle simmer. Let it cook for 2-3 minutes until slightly thickened.
- Stir in Parmesan cheese gradually, whisking until the sauce is smooth and creamy. If the sauce feels too thick, add reserved pasta water one tablespoon at a time to reach your preferred consistency.
- Toss the cooked pasta into the sauce until well coated. Return the steak bites to the skillet, gently mixing them into the pasta and sauce.
- Season with additional salt and pepper if needed. Garnish with fresh parsley before serving.
