- 2 boneless, skinless chicken breasts, thinly sliced
- 8 ounces egg noodles or spaghetti
- 4 cloves garlic, minced (fresh is best!)
- 1/4 cup soy sauce (low sodium preferred)
- 2 tablespoons honey or maple syrup
- 1 tablespoon rice vinegar or apple cider vinegar
- 2 tablespoons vegetable or canola oil
- 1/2 teaspoon crushed red pepper flakes (optional, for a little heat)
- 2 green onions, thinly sliced
- Freshly ground black pepper to taste
- Optional: 1 cup snap peas or sliced bell peppers for added veggies
Instructions
- Start by cooking the noodles according to package instructions until al dente. Drain and set aside, tossing with a bit of oil to prevent sticking.
- While the noodles cook, heat the vegetable oil in a large skillet over medium-high heat. Add the sliced chicken and season lightly with pepper. Cook for 5-6 minutes until golden and cooked through, stirring occasionally.
- Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant—but be careful not to burn it!
- In a small bowl, whisk together the soy sauce, honey, and vinegar. Pour this sauce over the chicken and stir well to coat. Let it simmer for 2-3 minutes until the sauce thickens and becomes sticky.
- If using veggies, toss them in now and cook for an additional 2 minutes to soften slightly but retain crunch.
- Add the cooked noodles into the skillet and toss everything together gently, ensuring noodles are fully coated with the sticky sauce.
- Sprinkle with sliced green onions and crushed red pepper flakes if you like some heat. Serve immediately for best texture and flavor.
