  • 2 cups cooked white or brown rice (day-old rice works great)
  • 1 lb boneless, skinless chicken thighs (or breasts)
  • 2 ears fresh corn, kernels removed (or 1½ cups frozen corn)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 cup mayonnaise
  • 1/4 cup crumbled cotija cheese (or feta as a substitute)
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper, to taste
  • Optional: diced jalapeño for extra heat

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the chicken thighs with chili powder, smoked paprika, cumin, salt, and pepper.
  2. Cook the chicken for about 5-6 minutes per side, or until golden brown and cooked through. Remove from skillet and let rest for a few minutes before slicing into strips.
