- 3 cups cooked pasta (I prefer rotini or penne for their texture)
- 3 ears fresh corn, kernels removed (or 2 cups frozen corn, thawed)
- 1/2 cup mayonnaise or Mexican crema
- 1/2 cup crumbled cotija cheese (feta is a great substitute)
- 1 jalapeño, finely chopped (optional for a mild kick)
- 1/4 cup fresh cilantro, chopped
- 2 cloves garlic, minced
- Juice of 2 limes
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
Instructions
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop cooking and cool it down. Set aside.
- While the pasta cooks, heat olive oil in a skillet over medium-high heat. Add the corn kernels and sauté until they begin to char and turn golden brown, about 5-7 minutes. Stir occasionally to prevent burning.
- In a large mixing bowl, combine the mayonnaise or crema, lime juice, chili powder, smoked paprika, minced garlic, salt, and pepper. Whisk until smooth and creamy.
- Add the cooled pasta, charred corn, jalapeño (if using), cilantro, and cotija cheese to the bowl. Gently toss everything together until evenly coated.
- Taste and adjust seasoning with more salt, pepper, or lime juice as needed. For best flavor, refrigerate the salad for at least 30 minutes before serving to let the flavors meld.
