  • 1 pound lean ground beef (90% lean works well)
  • 1 tablespoon olive oil
  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  • 2 cups cooked white or brown rice
  • 1 cup shredded cheddar cheese
  • 1 cup chopped tomatoes or pico de gallo
  • 1/2 cup sliced black olives (optional)
  • 1/2 cup chopped green onions
  • 1 cup crushed Doritos (Nacho Cheese flavor is my favorite)
  • 1/2 cup sour cream or Greek yogurt (for topping)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and cooked through, about 6-8 minutes.
  2. Drain excess fat if necessary, then stir in the taco seasoning along with 1/4 cup water. Let it simmer for 3-4 minutes until the sauce thickens slightly and coats the beef.
  3. While the beef simmers, prepare your rice according to package instructions or use leftover rice. Fluff the rice with a fork and keep warm.
  4. To assemble, start with a base of warm rice in each bowl. Top with the seasoned beef, shredded cheddar, chopped tomatoes or pico de gallo, black olives, and green onions.
  5. Sprinkle a generous handful of crushed Doritos over the top for that signature crunch.
