The key to this dish lies in selecting fresh, quality ingredients that balance each other perfectly. Whenever possible, I choose lean ground beef for a healthier option and fresh veggies to brighten up the bowl. The Doritos are what make this recipe uniquely fun, but if you want a twist, you can always swap them for your favorite tortilla chips. I love keeping things simple and relying on pantry staples that I usually have on hand, which makes this recipe a go-to in my household.
- 1 pound lean ground beef (90% lean works well)
- 1 tablespoon olive oil
- 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
- 2 cups cooked white or brown rice
- 1 cup shredded cheddar cheese
- 1 cup chopped tomatoes or pico de gallo
- 1/2 cup sliced black olives (optional)
- 1/2 cup chopped green onions
- 1 cup crushed Doritos (Nacho Cheese flavor is my favorite)
- 1/2 cup sour cream or Greek yogurt (for topping)
- Fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and cooked through, about 6-8 minutes.
- Drain excess fat if necessary, then stir in the taco seasoning along with 1/4 cup water. Let it simmer for 3-4 minutes until the sauce thickens slightly and coats the beef.
- While the beef simmers, prepare your rice according to package instructions or use leftover rice. Fluff the rice with a fork and keep warm.
- To assemble, start with a base of warm rice in each bowl. Top with the seasoned beef, shredded cheddar, chopped tomatoes or pico de gallo, black olives, and green onions.
- Sprinkle a generous handful of crushed Doritos over the top for that signature crunch.
- Add a dollop of sour cream or Greek yogurt and garnish with fresh cilantro if desired.
- Serve immediately to enjoy the contrast between the warm ingredients and the crispy Doritos.
