Instructions
- Preheat your oven according to the tater tots package instructions, usually around 425°F. Spread the frozen tots on a baking sheet in a single layer and bake until golden and crispy, about 20-25 minutes.
- While the tots bake, heat olive oil or butter in a large skillet over medium heat. Add the breakfast sausage, breaking it up with a spatula, and cook until browned and cooked through, about 7-8 minutes.
- If using bell peppers, add them to the skillet with the sausage and sauté until softened, about 3-4 minutes.
- In a separate bowl, whisk the eggs with salt and pepper. Pour into the skillet with the sausage and peppers, stirring gently to scramble. Cook until eggs are just set but still soft.
