- 3 cups elbow macaroni or your favorite pasta shape
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese

- 2 cups whole milk
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cloves garlic, minced

Instructions
- Bring a large pot of salted water to a boil. Cook the macaroni according to package instructions until just al dente, usually about 7-8 minutes. Drain and set aside.
- In a large saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
- Whisk in the flour to create a roux, cooking for 2-3 minutes until it turns a pale golden color. This step is key to thickening your sauce without lumps.
- Gradually whisk in the milk, stirring continuously to prevent clumps. Let the sauce simmer gently for 5-7 minutes until it thickens, stirring often.
- Lower the heat and stir in the shredded cheddar and mozzarella cheeses until melted and smooth. Add Italian seasoning, salt, and pepper to taste.
- Fold in the sun-dried tomatoes and chopped spinach, letting the residual heat wilt the spinach and infuse the sauce with their flavors.
- Combine the cooked pasta with the cheese sauce, stirring gently to coat every piece.
- Transfer the mixture to a buttered baking dish, sprinkle with Parmesan if using, and bake at 350°F for 15-20 minutes until bubbly and golden on top.
