The key to this dish lies in selecting the right ingredients that highlight each flavor without overpowering the others. I always reach for fresh, high-quality cucumbers and Greek yogurt for the tzatziki—it’s what gives that signature creaminess and freshness. For the chicken, I prefer using boneless, skinless chicken breasts or thighs, seasoned simply to let the tzatziki shine. The pizza dough can be store-bought or homemade, depending on your time and mood—both work beautifully here.
- 1 pound boneless, skinless chicken breasts or thighs
- 1 pre-made pizza dough (about 12–14 inches)
- 1 cup Greek yogurt (full-fat for creaminess)
- 1/2 large cucumber, finely grated and drained
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped (or 1 tablespoon dried)
- 1 tablespoon fresh lemon juice
- 1 cup shredded mozzarella cheese
- 1/4 cup thinly sliced red onion
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- Optional: fresh parsley or mint for garnish
Instructions
- Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up for a crispier crust.
- Season the chicken with salt, pepper, and a drizzle of olive oil. Cook in a skillet over medium heat for 5-7 minutes on each side until fully cooked and golden. Let it rest before slicing thinly.
- While the chicken cooks, prepare the tzatziki sauce by combining the Greek yogurt, grated cucumber (squeeze out excess water), garlic, dill, lemon juice, and a pinch of salt in a bowl. Mix well and refrigerate until ready.
- Roll out the pizza dough on a floured surface to your desired thickness. Transfer to a parchment-lined baking sheet or a pizza peel if using a stone.
- Brush the dough lightly with olive oil. Sprinkle the shredded mozzarella evenly over the surface.
- Arrange the sliced chicken and red onion over the cheese layer.
- Bake the pizza in the oven for 10-12 minutes, or until the crust is golden and cheese is bubbly.
- Remove from the oven and let cool for a minute. Dollop generous spoonfuls of tzatziki over the top, or spread it gently for a more even coating.
- Garnish with fresh parsley or mint if desired, slice, and serve immediately.
